There is no ham in this soup. I’m not against it, but I really do like split pea soup that is just vegetables.
This soup can cook in a little over an hour. You can soak the peas overnight, if you like, but it is not required. The theory is that it will save some cooking time. I generally don’t bother with soaking the peas. I do rinse and sort them.
Once the soup is on you can almost forget about it. Check in periodically to stir and ensure it doesn’t burn to the bottom of the pot.
This makes a healthy dinner or weekend lunch. Expect 4-6 servings.
